Preparation steps

Prepare the base: Crush the shortbread biscuits into fine crumbs and mix with melted butter. ⏱ 10 mins. Guide: the mixture should hold together well when pressed.

Baking the base: Press the crumbs into a tin (20–22 cm), forming an even base. Bake at 180°C for 8–10 minutes. ⏱ 10 minutes. Guide: the edges are lightly browned and the surface is dry.

Prepare the filling: Whisk the cream cheese and sugar on low speed until smooth. Add the vanilla, one egg at a time, then the sour cream (and starch if needed). ⏱ 8–10 mins. Guide: the cream is smooth, with no lumps or air bubbles.

Baking the cheesecake: Pour the filling onto the base. Bake at 160°C for 55–65 minutes. ⏱ 60 minutes. Guideline: the edges are stable, the centre wobbles slightly when the tin is shaken gently.

Cooling: Turn off the oven, open the door and leave the cheesecake for 30 minutes, then cool completely. ⏱ 30 minutes. Guideline: the surface should be smooth, without cracks.

Tip⏱ Cool the cheesecake in the refrigerator for at least 4-6 hours (preferably overnight). Before cutting, wet the knife with hot water — the pieces will be perfectly even.
