First, juice is squeezed from the cherries, and the pulp is boiled. This allows you to preserve the fresh aroma and extract the maximum flavor from the berries. Cherry juice pairs wonderfully with various dishes, especially poultry and meat. It is served chilled as an alternative to compote or lemonade. An ideal choice for a summer lunch!

Preparation steps

1. Prepare the cherries — Rinse the cherries, remove the stems and pits, and thaw frozen cherries if needed. Extract the juice and set it aside. Time: 15 min. Indicator: Fresh cherry juice is ready and the pulp is prepared for cooking.

2. Cook the fruit base — Cover the cherry pulp with water, add sugar, bring to a boil, simmer briefly, let it steep, and strain. Time: 15 min. Indicator: The infusion is richly colored, clear, and fragrant.

3. Mix and chill — Combine the cooled infusion with the cherry juice and lemon juice, add mint if desired, and chill well before serving. Time: 30 min. Indicator: The fruit drink is well chilled with a refreshing sweet-tart flavor.
