Preparation steps

Sort, rinse and dry the plums, piercing each one in several places with a toothpick. Wash and sterilize the jars and lids. Time: 30 min. Indicator: the plums are clean and dry, the skin is intact, and the jars are hot and ready to fill.

Pack the plums tightly into the jars, alternating them with garlic, ginger and chili. For the marinade, combine water, sugar, salt, cinnamon, pepper, bay leaf and cloves, bring to a boil, dissolve the sugar and add vinegar. Time: 25 min. Indicator: the spices are evenly distributed and the marinade is clear and aromatic.

Pour the boiling marinade over the plums to the top, cover with lids and leave to cool. Over the next three days, drain the marinade each day, bring it to a boil and pour it back over the plums. Time: 70 min. Indicator: the plums remain fully covered, the marinade becomes richer each day, and the plums develop a spicy aroma.
