Preparation steps

Dice the onion, slice the pepper and chop the tomatoes and garlic. Rinse and drain the beans and corn. Sauté the onion and garlic, add the vegetables, spices, beans and corn, then simmer until soft and thickened. Time: 25 min. Indicator: the filling is thick, aromatic and free of excess liquid.

Mash the avocado with lemon or lime juice, chop the lettuce and grate the cheese. Season the sour cream or yogurt with salt and pepper. Warm the tortillas in a dry skillet on both sides. Time: 13 min. Indicator: the avocado is creamy, the lettuce is crisp, and the tortillas are warm and soft.

Place the vegetable filling, avocado, lettuce, cheese and sauce onto each tortilla. Fold the edges inward and roll tightly into burritos. Time: 5 min. Indicator: the burritos are tightly rolled, the filling stays inside and the edges are securely closed.
