Preparation steps

Cut the rabbit into portions, rinse and soak if desired. Chop the onion, carrot and garlic. Sear the rabbit in oil until lightly golden. Time: 38 min.

Add the onion, carrot and garlic and sauté together. Stir in the flour and paprika, then add tomato paste, dried herbs and bay leaf. Pour in the stock or water. Time: 12 min.

Cover and simmer over low heat until the rabbit is tender and the sauce thickens, stirring occasionally. Time: 35 min.
