Preparation steps

Prepare the cherries — Sort, wash the cherries, and remove the pits if desired. Time: 10 min. Indicator: The cherries are clean and free of damaged fruit.

Make the syrup — Bring the water to a boil, add the sugar, and stir until dissolved. Time: 13 min. Indicator: The syrup is clear and free of sugar crystals.

Cook the compote — Add the cherries to the syrup, bring back to a boil, and simmer briefly. Time: 10 min. Indicator: The drink develops a rich cherry color and the fruit softens slightly.

Infuse and serve — Add mint if desired, cover, and let the compote infuse. Time: 30 min. Indicator: The aroma becomes richer and the compote is ready to serve.
