Preparation steps

Preparing the starter — Dissolve yeast in warm milk with sugar, add flour, mix, cover, and leave for 15-20 minutes. Time: 20 min. Reference: The starter is raised and active.

First mixing — Sift flour, add starter with warm milk, knead until smooth, cover and leave for 1 hour. Time: 60 min. Reference: The starter has risen 3-4 times.

Adding eggs and butter — Beat eggs with yolks, pour into the starter, add softened butter cut into cubes, sugar, spices, and flour, knead. Time: 15 min. Reference: The dough is smooth and elastic.

Dough rising — Transfer the dough to a large bowl, cover, leave in a warm place for 2 hours for rising. Time: 120 min. Reference: The dough has increased several times.

Preparing dried fruits — Wash the raisins, dried apricots, and candied fruits, dry on a paper towel, chop dried apricots, and candied fruits into small equal pieces. Time: 10 min. Reference: Dried fruits are prepared and of even size.

Adding dried fruits — Take the risen dough out of the bowl, knead again by hand, add raisins, candied fruits, dried apricots, and distribute evenly. Time: 10 min. Reference: Dried fruits are evenly distributed in the dough.

Shaping, Proofing and Baking — Divide the dough into panettone molds, filling them about one-third full, cover and leave in a warm place for another 40–60 minutes until the dough rises close to the rim, then bake in a preheated oven at 170–180°C for 35–50 minutes until golden brown. Cool the baked panettone, preferably upside down if desired. Time: 90 min. Indicator: Golden top, skewer comes out clean, crumb is soft and stringy.

Tip: Panettone tastes better the day after baking when the flavors are fully developed. Store in an airtight container for up to 7 days - thanks to long fermentation, it stays soft and doesn't dry out. Serve with hot coffee or tea.
