Guacamole with lime is a truly charismatic start to your day. The power of avocado is revealed when you mash it with a fork, leaving delicate lumps that add texture. But the real highlight is the lime, which we add in two stages: the juice immediately after mashing the avocado, and the zest to complement its aroma just before serving. The onion, which is first soaked in cold water, gives a milder flavour, and don't forget, it only takes 15 minutes!

Classic version: avocado, lime, onion, dill, salt

With tomatoes: add 1-2 seedless tomatoes, finely diced

With garlic: 1 clove of garlic through a press for piquancy

Spicy: add half a finely chopped jalapeño or chilli pepper


Secrets of tenderness and taste

Use ripe avocados: they are soft to the touch and have dark green skin.

Mash the avocado with a fork rather than a blender to preserve the texture.

Add lime juice immediately after mashing to prevent the avocado from turning brown.


Tips on ingredients

Avocado: choose fruits without dents that are slightly springy when pressed.

Lime: if you don't have lime, replace it with lemon in a 1:1 ratio.

Onion: red or white onions give the best flavour, Yalta onions are ideal.

Preparation steps

Prepare the avocado: cut it in half and remove the pit. Scoop out the flesh with a spoon into a bowl. Mash with a fork until smooth with some lumps. ⏱ 3 min. Guide: the flesh should be creamy, but with small pieces for texture.

Adding lime: squeeze lime juice onto the avocado. Stir immediately to prevent browning. Grate a little zest on a fine grater. ⏱ 2 min. Guideline: the avocado should be evenly coated with lime juice.

Prepare the vegetables: finely dice the onion, soak in cold water for 5 minutes, then drain. Cut the tomato into small cubes, removing the seeds. Finely chop the dill. Press the garlic through a garlic press. ⏱ 5 min. Guideline: the onion should become softer and less pungent after soaking.

Mixing: Add the onion, tomato, dill and garlic to the avocado. Mix gently. Season to taste. Add the lime zest. ⏱ 3 min. Guideline: the ingredients should be evenly distributed, and the texture should remain chunky.

Tip⏱ To prevent guacamole from turning brown during storage, smooth the surface and cover with cling film directly on the sauce, removing any air. You can also leave the avocado pit in the finished guacamole — it slows down oxidation.
