Preparation steps

Preparation of coloured jelly — Dissolve each sachet of jelly separately, using 20–30% less water than indicated in the instructions, pour into flat moulds and place in the refrigerator until completely set. ⏱ 10 minutes active + 2–3 hours cooling. Guideline: the jelly should be dense and hold its shape well.

Preparing the gelatin — Pour 100 ml of cold water over the gelatin, leave to swell for 20–30 minutes, then heat in a water bath or over low heat until completely dissolved, do not boil. ⏱ 5 minutes. Guideline: transparent liquid without grains.

Sour cream base — Mix room temperature sour cream with sugar and vanilla sugar until completely dissolved. ⏱ 5–7 min. Guideline: smooth, creamy mass without sugar crystals.

Adding gelatin — Pour warm dissolved gelatin into the sour cream mixture in a thin stream, stirring constantly. ⏱ 2 min. Guideline: the mixture should be homogeneous, without lumps.

Forming ‘broken glass’ — Cut the set coloured jelly into 1.5–2 cm cubes, carefully add to the sour cream mixture or layer into the mould. ⏱ 10–15 min. Guideline: the jelly pieces should be evenly distributed.

Cooling — Place the dessert in the refrigerator for at least 4 hours, preferably overnight. ⏱ 240 min. Guideline: the dessert is completely stable and holds its shape well when cut.

Tips⏱ The sour cream should not be cold, otherwise the gelatin will clump. For a perfect look, use a silicone mould — the dessert will be easy to remove. Cut with a hot knife, wiping it after each cut.
