Chocolate covered cherries
This thick cherry jam with the addition of cocoa and dark chocolate tastes similar to candies with cherry filling. Thanks to delicate cooking in several stages, the cherries retain their shape, and the syrup becomes very rich and shiny. This jam is equally delicious when served warm with pancakes and fritters, or fully chilled in winter with tea or coffee. In the festive version, a part of the syrup is flavored with a small amount of brandy, making the jam reminiscent of candies with a light alcohol note. For a denser texture, it's worth adding a bit of agar agar or pectin, reducing the cooking time. In winter, the jam can be made from frozen cherries, pre-draining excess juice and slightly reducing the amount of sugar.

Preparation steps

Prepare the cherries — Sort, wash, and pit the cherries, then combine them with sugar and lemon juice and let them rest. Checkpoint: Most of the sugar has dissolved and the cherries have released plenty of juice.

Cook the jam — Add the water, bring the mixture to a boil, skim off any foam, and simmer until the syrup slightly thickens. Checkpoint: The syrup has thickened while the cherries remain whole.

Finish with cocoa — Sift the cocoa into the jam, stir until completely smooth, and cook until done. Checkpoint: The jam has an even chocolate color, a smooth texture, and a rich aroma.
