Broken glass with fruit is a delicate cold dessert that does not require baking and combines a creamy texture with pieces of bright jelly and fresh fruit. It looks festive, is easy to prepare and always delights guests. Thanks to the sour cream, the dessert has a richer taste and a pleasant creamy softness.

Variations

  1. Some of the fruit can be replaced with berries: strawberries, raspberries or blueberries.
  2. For a more pronounced aroma, add a little vanilla sugar or lemon zest.
  3. Honey or agave syrup can be used instead of sugar.

Secrets of tenderness and taste

  1. Do not overheat the gelatin — heat only until completely dissolved.
  2. Add the jelly and fruit to the slightly cooled sour cream mixture so that they are evenly distributed.
  3. Allow the dessert enough time in the refrigerator to set properly.

Tips on ingredients

  1. Choose sour cream with a fat content of at least 20% for the best texture.
  2. Do not use fresh pineapple and kiwi — they prevent the jelly from setting.
  3. It is better to use different colours of jelly for a beautiful ‘stained glass’ effect.

Small culinary nuances

  1. Cover the mould with cling film — this will make it easier to remove the dessert.
  2. Wet the knife with hot water before cutting.
  3. Do not stir the dessert after pouring it into the mould — let the mixture set undisturbed.
