Broken glass with fruit
1
Broken glass with fruit is a delicate cold dessert that does not require baking and combines a creamy texture with pieces of bright jelly and fresh fruit. It looks festive, is easy to prepare and always delights guests. Thanks to the sour cream, the dessert has a richer taste and a pleasant creamy softness.
Variations
- Some of the fruit can be replaced with berries: strawberries, raspberries or blueberries.
- For a more pronounced aroma, add a little vanilla sugar or lemon zest.
- Honey or agave syrup can be used instead of sugar.
Secrets of tenderness and taste
- Do not overheat the gelatin — heat only until completely dissolved.
- Add the jelly and fruit to the slightly cooled sour cream mixture so that they are evenly distributed.
- Allow the dessert enough time in the refrigerator to set properly.
Tips on ingredients
- Choose sour cream with a fat content of at least 20% for the best texture.
- Do not use fresh pineapple and kiwi — they prevent the jelly from setting.
- It is better to use different colours of jelly for a beautiful ‘stained glass’ effect.
Small culinary nuances
- Cover the mould with cling film — this will make it easier to remove the dessert.
- Wet the knife with hot water before cutting.
- Do not stir the dessert after pouring it into the mould — let the mixture set undisturbed.
