Preparation steps

Preparing the rice — Rinse the rice with cold water, add two cups of water and half a teaspoon of salt. Bring to a boil and cook for 7–10 minutes until half cooked. Drain in a colander and cool. Time: 15 min. Guideline: Rice is soft outside but firm in the center.

Preparing the main ingredients — Grind the minced meat together with onion and garlic using a meat grinder. Place in a deep bowl. Time: 5 min. Guideline: Mince is uniform and finely textured.

Mixing the mince with rice — Add cooled rice, eggs, tomato paste, mayonnaise, salt, pepper, and spices to the mince. Mix well and lightly pound the mixture in the bowl several times. Time: 5 min. Guideline: Mixture is uniform, dense, and sticky.

Shaping the meatballs — Wet your hands with water. Divide the mixture into 16–20 parts and form balls the size of a walnut. Place on a baking tray greased with butter and sour cream. Time: 8 min. Guideline: Balls are smooth and uniform.

Preparing the sauce — In a bowl mix 250 g sour cream, 3–4 tbsp mayonnaise, and 3–4 tbsp ketchup. If needed, thin with water or broth. Pour over the meatballs so they are covered about two-thirds. Time: 3 min. Guideline: Sauce is smooth with no lumps.

First baking stage — Preheat the oven to 180°C. Place the tray with meatballs and sauce in the oven for 20–25 minutes. Time: 25 min. Guideline: Sauce begins to bubble around the edges.
