Preparation steps

Prepare and cook the peas — Sort, rinse, and soak the peas in cold water for 4–6 hours. Drain, add fresh water, bring to a boil, and remove the foam. Add baking soda and bay leaf, then simmer until tender. Checkpoint: The peas are well cooked and easily mashed with a spoon.

Prepare the onion and finish — Fry the diced onion in oil until golden. Season the peas with salt, drain excess liquid if needed, then add butter, fried onion, and pepper. Checkpoint: The mixture is thick and smooth, with the onion evenly distributed and the butter fully melted.
