Kutia is an ancient Ukrainian dish, an important part of the festive table on Christmas Eve. It symbolises generosity and prosperity. Kutia is easy to prepare, but it is filled with deep meaning and warms the heart with its sweet taste.

Preparation steps

Preparation and cooking of wheat — Rinse the wheat, soak for 6–8 hours (or overnight), then cook in fresh water until soft. ⏱ 60–80 min. Guideline: the grains should be soft but retain their shape.

Preparing the poppy seeds — Pour boiling water over the poppy seeds, let them steep, drain the water and grind until a ‘milky’ consistency appears. ⏱ 15–20 min. Guideline: the poppy seeds should be creamy and fragrant.

Nuts and dried fruit — Coarsely chop the nuts and dry them slightly. Pour warm water over the dried fruit and dry it. ⏱ 10–15 min. Guideline: the nuts are fragrant and the dried fruit is soft.

Mixing — Combine the warm wheat with the poppy seeds, nuts and dried fruit, add honey and a pinch of salt, and mix gently. ⏱ 5–7 min. Guideline: the mix should be moist and evenly sweet.

Infusion — Cover the kutia and let it steep. ⏱ 20-30 minutes. Guideline: the taste should be harmonious and the aroma rich.

Tip For a festive presentation, garnish the kutya with nuts and dried fruit on top, and stir gently before serving to distribute the honey evenly.
