Kutia with raisins is a classic Christmas version of a ritual dish symbolising prosperity, well-being and the continuation of the family line. Delicate wheat grains are combined with fragrant ground poppy seeds, sweet honey and juicy raisins to create a deep, multi-layered flavour associated with the warmth of home and family.

Variations

  1. Add walnuts or almond flakes for a crunchy texture.
  2. Replace some of the honey with fruit compote for a light fruity aftertaste.
  3. For a festive touch, add a drop of rum or cognac (optional, for adults).

Secrets of tenderness and taste

  1. Be sure to steam and grind the poppy seeds — this will give them a creamy texture and rich aroma.
  2. Add honey to warm, but not hot kutia.
  3. The consistency should be juicy, not dry — add a little fruit compote or warm water if necessary.

Tips on ingredients

  1. Wheat — special for kutia or whole, peeled.
  2. Poppy seeds — fresh, without bitterness.
  3. Raisins — light, soft; soak if necessary.
  4. Honey — natural, floral or linden.

Small culinary nuances

  1. If the grain is still hard, add a little boiling water and cook further.
  2. Do not overcook the wheat — kutia should be crumbly.
  3. After infusing, the taste becomes more harmonious.

Preparation steps

01

Preparing the wheat — Rinse the wheat, soak for 6–8 hours if desired, then drain the water. ⏱ 10 min (active). Guideline: the grain should be clean.

02

Cooking the wheat — Cover the wheat with water and cook over low heat until soft. ⏱ 60–80 min. Guideline: grains should be soft but not overcooked.

03

Preparing the poppy seeds — Pour boiling water over the poppy seeds, let them steep, drain the water and grind them in a mortar or blender until a ‘milk’ appears. ⏱ 15 min. Guideline: the poppy seeds should be creamy and fragrant.

04

Preparing the raisins — Soak the raisins in warm water, then dry them. ⏱ 10 min. Guideline: the raisins should be soft and juicy.

05

Combining the ingredients — Add the poppy seeds, raisins, honey, sugar and salt to the warm wheat and mix gently. ⏱ 5 min. Guideline: the honey has dissolved and the mixture is smooth.

06

Infusion — Cover the kutya and let it steep. ⏱ 20-30 minutes. Guideline: the flavours have ‘blended’ and the aroma is deeper.

07

Tip Serve kutya chilled or at room temperature. For a festive presentation, garnish with nuts, raisins and poppy seeds — it will look festive and very appetising.
