Preparation steps

Preparing the wheat — Rinse the wheat, soak for 6–8 hours if desired, then drain the water. ⏱ 10 min (active). Guideline: the grain should be clean.

Cooking the wheat — Cover the wheat with water and cook over low heat until soft. ⏱ 60–80 min. Guideline: grains should be soft but not overcooked.

Preparing the poppy seeds — Pour boiling water over the poppy seeds, let them steep, drain the water and grind them in a mortar or blender until a ‘milk’ appears. ⏱ 15 min. Guideline: the poppy seeds should be creamy and fragrant.

Preparing the raisins — Soak the raisins in warm water, then dry them. ⏱ 10 min. Guideline: the raisins should be soft and juicy.

Combining the ingredients — Add the poppy seeds, raisins, honey, sugar and salt to the warm wheat and mix gently. ⏱ 5 min. Guideline: the honey has dissolved and the mixture is smooth.

Infusion — Cover the kutya and let it steep. ⏱ 20-30 minutes. Guideline: the flavours have ‘blended’ and the aroma is deeper.

Tip Serve kutya chilled or at room temperature. For a festive presentation, garnish with nuts, raisins and poppy seeds — it will look festive and very appetising.
