Hungry kutia is a traditional dish of Ukrainian cuisine, prepared on the eve of Epiphany. Unlike Christmas kutia, this version is simpler and symbolises the end of the festive season. The dish is based on wheat, which is combined with honey, poppy seeds and sometimes dried fruit.

This dish has deep folk traditions and is linked to spiritual customs. Holodna kutia is prepared on the last day of the Christmas season, when the table becomes more modest but retains its symbolic significance.

Despite the simplicity of the ingredients, kutia has a rich flavour and a distinctive aroma. The combination of boiled wheat, sweet honey and fragrant poppy seeds creates a harmonious and nutritious dish.

Variations

In different regions, kutia may be prepared with the addition of raisins, nuts or dried fruit. Sometimes the wheat is replaced with rice or barley.

Secrets of tenderness and flavour

To ensure the wheat grains are tender, it is recommended to soak them for a few hours beforehand. This will speed up the cooking process and make the texture of the dish more tender.

Tips on ingredients

Use good-quality honey and fresh poppy seeds. It is these ingredients that form the main flavour of traditional kutia.

Fine culinary nuances

It is best to grind or crush the poppy seeds slightly before adding them — this will make them more aromatic and give off more flavour.
