
Homemade yogurt sauce - tsatsiki
"Tsatsiki" refers to traditional sauces of Greek cuisine. In Greece it is made from yogurt, fresh cucumbers, garlic, salt and spices. Due to the presence of grated fresh cucumber, the sauce has a refreshing taste. Garlic gives a pleasant, unobtrusive sharpness, and dill adds its unique flavor. All these ingredients are harmoniously combined with the base of the sauce - homemade yogurt. And as advice on the cooking process: instead of wine vinegar you can use lemon juice. If you put "Tsatsiki" in the refrigerator for a few hours before eating, the taste of the sauce will only win: it will become more saturated.

Preparation steps

Wash the cucumber, grate finely. To prevent the sauce from turning out liquid, be sure to drain the excess juice. Peel the garlic, wash, dry and finely chop or run through a garlic press. Dill wash, dry. Set aside a few twigs for decoration.

The remaining greens should be finely chopped. Mix grated cucumber, chopped garlic and dill. Add yogurt, olive oil and wine vinegar, mix thoroughly. Season with salt and ground pepper.

Before serving, cool the sauce, place in bowls, and garnish with olives and dill sprigs. Serve the tzatziki with lightly toasted pita bread cut into strips, as well as meat and poultry dishes.
