Chop the onion. Heat a large deep skillet over medium heat. Pour olive oil. Add onion and sauté for 2-3 minutes.

Add spinach. Salt and pepper. Stir until the spinach begins to soften.

Break the eggs and carefully pour them into the pan. Cover with a lid and keep on fire for two to five minutes, depending on the desired degree of doneness. Then sprinkle with pre-cut feta and serve immediately. Enjoy your meal!
