Description

Buckwheat honey contains a large amount of fructose. Its color is dark, up to brown. When stored for a longer period under conditions with access to light, it changes color to dark brown, almost black. It crystallizes, forming coarse solid crystals that settle in the liquid honey. After crystallization, it most often has a brown color. The taste is sharp, even slightly pungent. Buckwheat honey contains an especially high amount of magnesium, which is easily absorbed and is recommended in anti-cancer diets. It is used in the treatment of disorders of the circulatory system, especially against a sclerotic background, as well as in liver diseases, weakened vision, hearing, and memory. It helps the functioning of the heart muscle.
