Description
Buckwheat honey contains a high amount of fructose. Its color is dark, up to brown. When stored for a long time with exposure to light, it changes color to dark brown, almost black. It crystallizes, forming coarse solid crystals that settle in the liquid honey. After crystallization, it most often has a brown color. The taste is sharp, even slightly pungent.
