The highest quality viticultural practices are applied throughout the year to maximize the potential and express the terroir of Shabo in the grapes.
The wine blends are personally selected by Vazha Iukuridze, founder of Shabo Wine House. The collection consists only of wines from “special harvest years” (vintage), exceptional in quality, which are characterized as Shabo Grand Wines. Among them are wines with a controlled designation of origin (CDO). From 1,000 to 4,000 bottles of each variety per season.
The wines have great aging potential - at least 10 years. Recommended for collecting and storing in a wine cellar for long-term aging. The wines are made from Shabo's own terroir grapes, whose vines have been carefully selected for the terroir's soils, purchased in Europe, and planted on high-quality micro-plots of the Shabo terroir that meet Grand Cru standards.
The amount of grapes on the vine is regulated and significantly reduced to 1.6 kg. The grapes are harvested by hand and, within 15 minutes, are delivered by refrigerated trucks for multiple sorting and delicate processing with temperature control at the SHABO Wine House, whose equipment is among the best in Europe. Here, they adhere to the principle of hand-made production and create original varietal wines, as well as double and triple blended wines that are atypical for Ukraine.
The wines are created using elite micro-winemaking technologies. White grapes are fermented in temperature-controlled oak barrels, which is unique for Ukraine. Red grapes undergo fermentation on the skins with temperature control in special Taransaud oak vats. The wine is aged in oak barrels for at least 9-12 months. Additional bottle aging is mandatory.
