SHABO Limited Edition using Kakhetian technology
A limited collection of orange wines created using a centuries-old Georgian wine-making technology unique in the world - Kakhetian, when fermentation and aging take place on the lees in clay amphorae called “kvevri”.
This wine-making technology is perhaps the oldest in the world, dating back about 8,000 years. It has no analogues and is included in the UNESCO list of intangible cultural heritage. Today, only a few people are involved in the production of qvevri, usually family dynasties in Georgia who pass down their recipe for making these special “amphorae” from generation to generation. One such dynasty of craftsmen, the Kbilashvili family (who live in the Telavi region), made qvevri for SHABO.
The company brought 27 qvevri, with a capacity of 1,250 and 2,000 liters, to Ukraine and installed them in the SHABO Wine House. In each of these cone-shaped amphorae, which are located underground, the process of maceration and aging on the lees takes place over a period of 5 months. When aged on the lees, the wine acquires a bright amber color and is enriched with antioxidants and vitamins contained in the solid particles of grapes. The wine also undergoes additional bottle aging. At all stages of production, quality control was carried out by the best experts from Georgia.
