Chilled Broiler Chicken Neck

Chicken neck – the upper part of the young bird's body. There is little meat on the necks, but the product is rich in protein, making it quite filling. It is perfect for making lean soups or hearty jelly. The necks can be coated in flour and fried in a pan until a golden crust forms. Alternatively, they can be stewed with potatoes.
