Cold smoked capelin. The surface of the fish is clean. The color of fish meat is from white, light gray to beige-yellow. The smell and taste characteristic of this type of smoked fish, without foreign smells and tastes. The consistency is tender, juicy, maybe a little weakened and smearing. Packed under vacuum in a polymer tray.

Capelin are small fish that come to our beaches every year to spawn; it can be difficult to accurately predict their arrival which is why I’ve created this Capelin Calendar: a place to check if the capelin have arrived in Middle Cove. Unlike many other species of smelt, the capelin does not enter freshwater to spawn but lays its eggs instead close inshore, even on the wave-washed gravel of beaches. Like other smelt, however, capelin are sleek, slender fishes with olive-green backs and silvery white bellies. They have small scales and large eyes and do not reach lengths of more than about 20 cm (8 inches). Capelins are exceedingly abundant and are eaten by a great variety of other fishes, seabirds, and mammals.
