Stages of cooking
Fresh fish should be cleaned of scales and fins, head and tail left, gutted and washed.
Parsley and garlic finely chop, put in a small bowl, pour 2 tbsp. spoons of olive oil and stir.
Peel an onion and cut into large pieces. Wash tomatoes and cut into rings.
Salt the fish inside and out. Inside the fish put slices of onion and a mixture of oregano and garlic. On a baking sheet greased with olive oil, put the tomato slices, fish on top.
Grease the outside of the fish with the remaining mixture and place the onions and tomatoes. Wrap in foil and place in an oven preheated to 200 degrees.
Cook for 20 minutes. Then open the foil and cook for another 10 minutes for the toasted crust.
Lay out on a plate and garnish with lemon and herbs.
