It is one of the best known hard cheeses in France. Maazdam gets its name from the Swiss town where the recipe was developed. Maazdam is made from cow's milk. It needs to ripen for at least four weeks in a cool cellar, to get its peculiar taste - sweetish-fruity with nutty overtones. Beneath the smooth, waxy yellow crust lurks a pale yellow flesh, riddled with large, equally sized and shaped holes. This is the main sign of Maazdam's distinction. The "eyelets" are formed by the action of gases resulting from the maturation of the cheese. "Maazdam" is widely used in the kitchen. It goes well with light wine and fruit (especially grapes), is served as a cold snack and is used in desserts and canapés.
