It contains a high amount of fructose and therefore crystallizes very slowly. Pure acacia honey has a light cream color that transitions to colorless. After crystallization, it ranges from white to straw-yellow. Its aroma slightly resembles the scent of acacia flowers. Fully matured acacia honey has a higher sucrose content than other types of honey. Acacia honey is used in the treatment of stomach and duodenal ulcers, gastritis with increased acidity, inflammation of the mucous membrane, and spastic conditions of the intestines. In cases of ulcer disease, acacia honey accelerates the regeneration of tissues, existing erosions, and abscesses. It also affects intestinal peristalsis and is characterized by low biotic activity.
