Taste: fresh, pronounced acidity perfectly balanced with softness. Long finish with fruity and citrus notes, oiliness, and minerality in the taste.
SHABO GRANDE RESERVE
A limited collection of aged still wines. Aging: 9-12 months in oak barrels and additional aging in bottles.
The wines are created according to the principles of premium winemaking:
- Use of Shabo's own grapes from the appropriate plots. The vines were purchased in Europe with the characteristics of Shabo's soils in mind and planted in the best mini-plots of the terroir.
- In order to create a product of exceptional quality, the number of grape bunches on each vine is reduced according to the grape variety: up to 2-2.5 kg for reds and up to 1.5-1.7 kg for whites.
- The grape bunches are harvested by hand into boxes. Within 15 minutes, they are delivered by refrigerated trucks to the SHABO Wine House, which is equipped with some of the best equipment in Europe. Here, the grapes undergo a delicate manual sorting process in several stages and are then processed. This is followed by fermentation with automated temperature control: white wines in oak barrels, red wines in Taransaud oak vats.
- The wines are aged in oak barrels for 9-12 months.
- Quality control at each stage is carried out by experts from SARL Derenoncourt (France).
- The mastery of SHABO winemakers is also embodied in dry aged wines of double and triple blending, such as Cabernet-Merlot, Chardonnay-Riesling, Chardonnay-Sauvignon Blanc, Cabernet Franc-Merlot-Saperavi.
- They can be recommended for collecting. They have great potential for bottle aging: white wines - at least 5 years, red wines - at least 7 years.
- Each variety produces 2,000 to 5,000 bottles per season.
