Chipped peas are obtained from food peas by their peeling and further rubbing. Chipped peas are undivided cotyledons of round form with a smooth surface. Percentage of chipped peas in this type of product cannot exceed 5%, their colour should be either yellow or green. Peas of other colours mustn’t constitute more than 7%. There exist two sorts of peas - the first and the second. The company produces peas of the first sort only. Peas – the most ancient cultivated plant. It dates back to Bronze and Stone Age – even then it was cultivated by the people of Asia Minor. The seeds of peas dated by the third millennium BC were found in Chernovtsy and Ivano-Frankovsk Regions of Ukraine. The most "ancient" seeds of peas belonging to the late Stone Age (over 20,000 years ago) were found in Greece (Thessaly), Croatia, Switzerland, western Germany (Württemberg), Upland Austria. Peas were considered as the major foodstuff in Ancient Egypt, in East Africa and India, they were dug out during the excavations of Troy, and appreciated as early as the times of Homer. Peas were one of the first European plants that colonists planned to grow up on the American continent. Dishes from peas were obligatory in the menu of the English kings (including Queen Elizabeth). Protein content in peas is almost the same, as in meat, eggs and milk (23%). Amino acid structure of peas is such that there one can find almost all chemical substances vital for a person, particularly lysine, cystine, tryptophane, arginine, inositol, choline and methionine. Peas are rich in mineral elements: potassium, magnesium, calcium, phosphorus, sulphur, zinc, nitrogen, iron. All these substances help our organism resist many illnesses and infections. The elements found in peas also participate in blocking of radioactive compounds that penetrate into the human body. Vitamins of group B are almost ideally balanced in peas. Together with inositol and choline they play the important role in the process of metabolism, preventing ageing and sclerosis, they also strengthen nervous and immune systems (there is a strong belief that lack of choline in the human body leads to various cancerous growths). In peas there are a lot of selenium, possessing anticancerogenic properties, and also provitamin A and vitamins D and Е which help cells of our organism to remain young and healthy. Hippocrates advised to use peas in food for all those who suffer from diseases of cardiovascular system, anemia, goitre and obesity. Doctors-dieticians also mention one remarkable feature of pea dishes – they help to eliminate brown and yellow stains on the skin and make it clear and velvety. It is necessary to remember, that acute forms of gouts, nephrite, cholecystitis, aggravation of inflammatory processes of gastrointestinal tract may be reasons for individual consultation with a physician as for the possibility of including pea dishes into the individual diet.
