Coarse durum wheat flour is ideal for making Italian pasta. It makes a dough that is less sticky and more elastic so that the pasta holds its shape. Method: To prepare the egg pasta, mix 1 kg of flour with 360-380 g whole eggs. Knead until the dough reaches a homogeneous and sufficiently hard consistency. Cover with plastic wrap and leave to rest for at least 1 hour at +4 °C. Shape the paste into the desired shape.
