Feyel Duck Foie Gras Block 120g
120 g
Feyel, — duck liver mousse. Mousse is a foie gras emulsion (at least 50%) with the addition of duck fat. For the manufacture of duck foie gras, the liver of only two types of ducks is used: musky and mulard duck, and only males. Although it is believed that the taste differences between goose and duck liver are insignificant, they are still there, and a real gourmet will unmistakably distinguish foie gras. Duck foie gras has a richer aroma and a sharper and sharper taste than goose foie gras. Duck liver mousse is recommended to be served slightly chilled with a baguette or other fresh bread, accompanied by dry white (best Alsatian) wine or red wine from Pinot Noir grapes. The mousse is broken off from a piece with a fork and placed on the bread, preferably not to be smeared.
