The grapes are left on the vine to over-ripen, and the harvest is done before the grapes begin to dry. At the end of vinification, the wine is aged for 2 months in French oak barrels. The aroma features candied fruits, plums, dried figs, and blackberries with subtle notes of Italian cherry tomatoes, orange peel, and Japanese green tea. The taste is creamy, reminiscent of the aromas of candied dark fruits, with a unique balance of tannin sensations, acidity, and sweetness.
