To get 1 kg of cheese, you need 16 liters of milk. A head of ripe cheese has a diameter of 35 - 45 cm, a mass of 24 - 40 kg. The structure of the cheese is gritty, scaly, brittle. Parmesan has a sharp, rich flavor and deep aroma.
