Two names - “Pearl-barley” in English and «перловка» [perlovka] in Russian both reflect the similarity between "pearls" (gems) and separate grains, into which the barley is rubbed. Pearl barley has grains of the oval or round form. In general their colour is white with a yellowish hue. The corn is mealy, separated from floral films and well rubbed. Depending on the size and true surface of the grain, pearl barley falls into five categories, indicated with numbers. The largest grains belong to the first category (#1), they are of the oval form, having 3,0 - 3,5 mm in diameter. Our company works with the grains of this category only. Barley is included into the limited number of the most ancient cultivated cereals of the Earth. According to the Russian scientist N. I. Vavilov two centers were defined as possible motherland of barley - Mediterranean areas and Asian territories bordering on the Eastern Europe. Archeologists who conducted excavations of late Paleolithic sites in Israel had found seeds of wild wheat and barley. Radiocarbon measurements were applied to specify their age – 19400 years. The oldest grains of cultivated wheat and barley had been found in Jordan. Their age was estimated as 11000 years. Barley is the most resistant cereal which grows ripe in northern widths and in high mountains, therefore it is cultivated in northern areas of Finland and Norway, near Verkhoyansk in Russia, in Alaska and in mountainous areas of the Himalayas. Food value of barley is very high. In its grains there are 66% of carbohydrates, 4,5% of cellulose, up to 2% of fats and up to 11% of proteins. Barley is rich in mineral substances and microelements. It contains potassium, phosphorus, calcium, iron, copper, manganese, zinc, selenium, molybdenum, nickel, cobalt, strontium, chrome, boron and iodine. In barley there are lots of vitamins of groups B, Е and РР. БDishes from barley possess softening, coating, antispasmodic, anti-inflammatory and corroborative properties. There exist scientific data proving that barley slows down growth of tumors at the initial stage of their development. Dishes from pearl barley are recommended in complex treatment of mammary glands and in order to strengthen the flow of milk when women feed their babies. This foodstuff is indispensable when people succumb to adiposity, diabetes, diseases of kidneys (including pyelonephritis) and urino-genital system, as well as gouts, arthritis. It may also be regarded as merely corroborative means after surgery. In the form of porridges and garnishes pearl barley is included into the diets aiming at treatment of constipation and obesity; in the form of gruel it can be recommended for those having acute problems with gastrointestinal tract.
