Dry ground star anise seeds are used as spices. Star anise is used for baking confectionery (gingerbread, cookies, etc.). Star anise should be ground immediately before use, put in the dough before baking. The peculiarity of star anise is that when heated, it begins to release its aroma, which is preserved in the finished product. Star anise is also used in the preparation of jellies, mousses, compotes, fruit dishes from plums, quince, pears, apples, as well as for flavoring vodka and liqueur in industrial production, grog and rum at home. It is used to flavor and improve the quality of jam (for example, cherry jam). It harmonizes well with other spices: black pepper, fennel, cinnamon, cloves, ginger. This makes it possible to use star anise in spicy mixtures to improve the taste of pork and poultry dishes (geese, ducks, chickens). It gives dishes not only freshness and aroma, but also improves taste properties. Adding star anise to strong sweet tea will give it a unique aroma. Star anise is also used in the preparation of pickles, marinades from vegetables and fruits. In Eastern cooking, star anise is added to gravies and sauces for vegetable and rice dishes. Please note that it is not compatible with fish dishes and even spoils them. Star anise should be used in small doses: 1 g per one portion of meat dishes; 1-2 seeds per 1.5 liters of drink.
