Saury is known as Sanma fish in Japan. It’s sold in various ways in Japan and believe me it, it’s a winner. It’s perhaps the best bargain for a fish which is rich in omega-3 and virtually no mercury poisoning as well as abundant. Traditionally saury fish was the choice of fish for the Edo period. The Edo Emperor prized this ocean fish and ate them raw, pickled or simply shiyoyaki (salted/fried). Saury is sometimes compared to sardines. And unlike sardine, saury actually has a stronger flavor. It’s much smaller than your traditional Saba or Japanese mackerel so I do believe that it’s often mistaken as a sardine over mackerel.
